Ingredients

Meat

  • 1/2 lb. raw boneless skinless chicken thighs per person. No need to trim if you use a good quality product. Some fat will keep it moist. You’ll get an approximate 30% shrinkage.
  • 1/2 lb. of Big Ben BBQ+ for every 15 lbs. of raw meat.
  • Note: It looks a little like seasoning salt, but don’t be afraid to apply liberally because salt is only a portion. It’s formulated to help seal in the natural juices of your meat.

Instructions

Meat Prep

  1. Cover each thigh on both sides liberally with the BBQ+. It may be applied just before putting on the grill or the night before.
  2. Note: It looks like seasoning salt, but has a small amount of salt in comparison.

Grilling

  1. Grilling with charcoal is recommended mostly because of flare ups with gas grills.
  2. Run grill approximately 300 to 350 degrees F. Keep flipping chicken at least every 10 minutes.
  3. Boneless chicken thighs need at least 30 to 45 minutes or until internal temperature reaches 175 to 180 degrees F.
  4. Chicken Breast internal temperature needs to reach 165 degrees.

Other Options

  1. This same seasoning process can be used for pan frying or baking.
  2. Leftovers can be used in many different ways. Chop in small pieces to use for chicken wraps, salads or chicken quesadillas.
Notes:
The quality of grilled chicken is greatly enhanced by continuous rotating. Think rotisserie chicken from Costco or similar.

The reason of the self basting from its own natural juices is that the longer it lays in one position, the more juices will drip off. Using the Big Ben Rotisserie Grill is the ultimate in chicken cooking.

This is another reason that slow cooked chicken cannot compare with correctly grilled chicken.
